Fueling Your Immune System During Quarantine

My husband and I finished our last day of quarantine this weekend. During our time recovering from COVID and quarantining we realized how important it is to fuel your body with nutrients to help you stay healthy and support our immune systems! According to the World Health Organization, "While no foods or dietary supplements can prevent or cure COVID-19 infection, healthy diets are important for supporting immune systems. Good nutrition can also reduce the likelihood of developing other health problems, including obesity, heart disease, diabetes and some types of cancer." Since we couldn't go outside and report on a news event, I decided to document and share some meals we have been making to try to support our immune systems best during the pandemic.
Breakfast
For breakfast we typically make an oatmeal full of protein and fresh fruit!
Lunch
This simple lunch is a good way to get in extra protein and greens!
Instead of an extra coffee during the day, we decided to start trying matcha. Matcha is still caffeinated, but is a better energy source than coffee. You can read more about the benefits of matcha here.
Dinner
For dinner we made baked chicken with mushroom, onion, and garlic gravy and served it with a side salad. Peter Jaussen stated that he tried to eat healthy before he tested positive for COVID. "You should always strive for health." said Peter.
